Hakata ramen originates in the city of Hakata, located northwest of Kyushu. The main distinguishing characteristic of Hakata ramen is the thick white soup made from pork bones, also called Tonkotsu soup (pork) ramen. Another difference is the finer noodles that are either straight or wavy. The decorative garnishes are simple: cha-shu, chopped green onions, red ginger and sesame seeds.
When pork bone (tonkotsu) is boiled for more than 12 hours, the broth (soup) becomes white, thick and rich in collagen which is a natural element for skin care.

This just tastes very bland (the Kumamoto ramen). It's not "bad" bad, but it is lackluster. The ambiance though is cool, having the individual stalls is a fun Japanesque experience. I'd have preferred if the waiter bell rang less loudly, kinda stressful to have it shout next to you; & coupled with a server that spoke at the speed of sound & seemed to count the seconds for me to leave, today was not an enjoyable experience.View more

A nice, quiet & cozy place! I went there with my husband & we were satisfied with our portions given ❣️ We usually going the one downtown but when we saw this one while we were walking in the area, we had to give it a try. It was a pretty chill place to go there, will come back again!View more
I used to love the downtown one & wanted to give this one a try! The ramen was good but the portion of the toppings seems less. The karage was really good but the porc dumplings were just okay. We also took their katsu cause the downtown one was so juicy & tender but it was so disappointing, we couldn't really chew the meat, definitely frozen! Disappointed overall.View more
I took the Tantan men & karaage & I was a bit disappointed. The ramen broth was very oily, I couldn't finish it, & the karaage didn't have a good crisp, the texture was sorta elastic & not super well seasoned. If I were to go back, I'd try one of the rice dishes instead, those looked pretty good. This is maybe due to inflation but 40$ (tip included) for a bowl of ramen & karaage seems a bit intense.View more

I went by myself & I really enjoyed it. I like the concept of individual cabinets, but they also have bigger ones for 2 people. The service was good & polite. The food was tasty. I recommend the fried octopus.View more

The food quality has gone down a lot over the years. I used to love eating here. Now it's just overpriced generic ramen that asks for minimum of 18% tip. I love this kind of business model where you get your own private "booth" if you eat alone; but unfortunately that's the only special thing about this place. The water faucet has grimes all over it like no one has cleaned it in months. If you want good ramen, don't go here.View more
i liked this place a lot & thought it was a lovely atmosphere. the food is good, not outstanding, but flavorful & in good portions. good spice to the spicy ramen as well. one thing i would highly recommend is getting an extra egg with ur ramen!! it is definitely more pricier than it should be.View more
